The 2023 Wabasha County Dairy Princess is Beth Holst. She is the daughter of Jary and Celene Holst and a senior at PEM. Beth and her family have a fourth generation dairy farm near Kellogg. Her favorite part about the dairy community is the learning experiences and job opportunities it offers for everyone! There's a space for everyone here, from being in the barns to ag office jobs everyone has an important role to play in the success of the dairy farm. Beth has been an ambassador in the program for the last two years and is ready to run for princess this year. She has been inspired to run by all the determined female voices that came before her. Beth's favorite dairy food is yogurt. Her favorite way to use yogurt is in smoothies, but it's also delicious with granola or plain!

Sophie Stelling is a Wabasha County Dairy Princess attendant. She is the daughter of Brent and Tricia Stelling and a senior at PEM. Sophie and her family have a century dairy farm near Millville. Her favorite part about the dairy community is the willingness farmers have to share their way of life with those that are not familiar with farming or where their food comes from. There are countless events and opportunities for community members to see a dairy farm and learn about agriculture. Sophie has been a dairy ambassador for the last two years. She is running for dairy princess this year because she loves promoting the dairy community. She is looking forward to events this summer, and the opportunity to engage with people about their food choices. Sophie says a glass of milk will make any meal better!

Ashlyn Schumacher is also a Wabasha County Dairy Princess attendant. She is the daughter of Chad and Amy Schumacher, and a senior at PEM. Ashlyn and her family have a robotic dairy farm outside of Plainview. Ashlyn's favorite part about the dairy community is how supporting and willing to lend a hand everyone is. Ashlyn decided to run for dairy princess because she has been an ambassador in the program for the past two years and is ready for the challenge of dairy princess. She also wants to be a dairy princess because her sister was last year, so she would like to continue the tradition for her family and give back to the dairy community. Ashlyn's favorite dairy food is chocolate milk because it is basically her coffee substitute!

Lexi Yust is the Wabasha County Dairy Princess ambassador. She is the daughter of Andy and Brandy Yust. Lexi is a sophomore at PEM. Lexi works on her Grandparents dairy farm outside of Plainview. She has been helping on the farm since she was very little. She enjoys the conversations she has with farmers because they are always so down to earth and not consumed by the drama of the world. She admires the compassion they have for their animals. This is Lexi's first year in the dairy princess program. She didn't know if she was princess material, but she was convinced after talking to past princesses about their positive experiences. She is excited to get out of her comfort zone and accept the challenge of dairy ambassador.
